Keto Beef & Cauliflower Rice Casserole
Ingredients:
- 1 lb ground beef
- 4 cups cauliflower rice (fresh or frozen)
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 cup shredded cheddar cheese
- 1/2 cup cream cheese
- 1/2 cup heavy cream
- 1/4 cup sour cream
- 1 cup beef broth
- 1 tsp paprika
- 1 tsp ground cumin
- 1/2 tsp chili powder (optional for a little kick)
- Salt and pepper to taste
- 1 tbsp olive oil or butter
- 1/4 cup green onions or parsley for garnish (optional)
Instructions:
- Preheat the Oven: Preheat your oven to 375°F (190°C).
- Cook the Ground Beef:
- Heat olive oil or butter in a large skillet over medium heat.
- Add the diced onion and minced garlic, sauté until softened (about 3-4 minutes).
- Add the ground beef to the skillet and cook until browned. Season with salt, pepper, paprika, cumin, and chili powder (if using).
- Drain excess fat if necessary and set aside.
- Prepare the Cauliflower Rice:
- If using fresh cauliflower, pulse florets in a food processor until they resemble rice-sized grains. If using frozen cauliflower rice, thaw it and drain any excess moisture.
- In the same skillet, add the cauliflower rice and cook for about 5 minutes until tender.
- Make the Creamy Sauce:
- In a saucepan, combine the cream cheese, heavy cream, sour cream, and beef broth. Cook over medium heat, stirring frequently until the cream cheese is fully melted and the sauce is smooth.
- Add salt and pepper to taste.
- Assemble the Casserole:
- In a greased 9×13 inch baking dish, layer the cooked cauliflower rice, ground beef mixture, and creamy sauce. Stir gently to combine.
- Top the casserole with shredded cheddar cheese.
- Bake:
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Garnish and Serve:
- Once baked, remove the casserole from the oven. Let it cool slightly.
- Garnish with chopped green onions or parsley if desired.
