Jalapeno Popper Chicken Salad


  • 2 cups cooked chicken, shredded or chopped
  • 1/2 cup mayonnaise
  • 1/2 cup cream cheese, softened
  • 1/4 cup pickled jalapenos, chopped
  • 1/4 cup shredded cheddar cheese
  • 2 tablespoons chopped fresh cilantro (optional)
  • Salt and pepper to taste
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon paprika


  1. Prepare the Chicken: Cook chicken breasts in boiling water until fully cooked, then shred or chop into small pieces. Alternatively, you can use rotisserie chicken.
  2. Mix the Dressing: In a large bowl, combine mayonnaise, softened cream cheese, garlic powder, onion powder, paprika, salt, and pepper. Mix until smooth and well combined.
  3. Combine Ingredients: Add shredded chicken, chopped pickled jalapenos, shredded cheddar cheese, and chopped cilantro (if using) to the dressing mixture. Stir well to combine all ingredients thoroughly.
  4. Chill and Serve: Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow flavors to meld. Serve chilled.
  5. Optional Serving: You can serve the chicken salad on its own, with a side of lettuce wraps, or with keto-friendly crackers.
