Ingredients:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup shelled pistachios, finely chopped
- 1/2 cup white chocolate chips (optional)
Instructions:
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the egg and vanilla extract to the butter-sugar mixture and mix until well combined.
- In a separate bowl, whisk together the flour and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until a cookie dough forms.
- Gently fold in the chopped pistachios and white chocolate chips, if using.
- Shape the cookie dough into a log or disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes. Chilling the dough will make it easier to handle.
- Preheat your air fryer to 325°F (160°C).
- While the air fryer is preheating, cut the chilled cookie dough into even slices, about 1/4 inch thick.
- Place the cookie slices in a single layer in the air fryer basket or on the air fryer tray, leaving some space between each cookie.
- Cook the cookies in the preheated air fryer for 8-10 minutes, or until they are golden brown and slightly firm to the touch. Be sure to check them regularly to prevent overcooking.
- Once done, remove the cookies from the air fryer and allow them to cool on a wire rack.
- Enjoy your air-fried pistachio cookies with a cup of your favorite beverage!
