Ingredients:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup shelled pistachios, finely chopped
  • 1/2 cup white chocolate chips (optional)

Instructions:

  1. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  2. Add the egg and vanilla extract to the butter-sugar mixture and mix until well combined.
  3. In a separate bowl, whisk together the flour and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until a cookie dough forms.
  5. Gently fold in the chopped pistachios and white chocolate chips, if using.
  6. Shape the cookie dough into a log or disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes. Chilling the dough will make it easier to handle.
  7. Preheat your air fryer to 325°F (160°C).
  8. While the air fryer is preheating, cut the chilled cookie dough into even slices, about 1/4 inch thick.
  9. Place the cookie slices in a single layer in the air fryer basket or on the air fryer tray, leaving some space between each cookie.
  10. Cook the cookies in the preheated air fryer for 8-10 minutes, or until they are golden brown and slightly firm to the touch. Be sure to check them regularly to prevent overcooking.
  11. Once done, remove the cookies from the air fryer and allow them to cool on a wire rack.
  12. Enjoy your air-fried pistachio cookies with a cup of your favorite beverage!
