Home Made Keto Creamy Tuscan Shrimp

Ingredients:

  • 1 lb (450g) large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup chicken broth (or vegetable broth)
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups spinach, fresh or frozen (thawed and drained)
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1 tsp Italian seasoning (optional)
  • Fresh basil or parsley for garnish

Instructions:

  1. Cook the Shrimp:
    • Heat 1 tbsp olive oil in a large skillet over medium heat.
    • Add the shrimp and season with a pinch of salt and pepper.
    • Cook for 2-3 minutes on each side until pink and opaque. Remove the shrimp from the skillet and set aside.
  2. Make the Creamy Sauce:
    • In the same skillet, melt the butter and add the remaining 1 tbsp of olive oil.
    • Add the minced garlic and sauté for about 1 minute until fragrant.
    • Pour in the chicken broth, scraping the bottom of the skillet to release any browned bits.
    • Stir in the heavy cream and bring it to a simmer. Let it cook for 2-3 minutes until it slightly thickens.
  3. Add Sun-Dried Tomatoes and Spinach:
    • Stir in the chopped sun-dried tomatoes and spinach. Let it cook for a couple of minutes until the spinach wilts.
  4. Finish the Sauce:
    • Stir in the Parmesan cheese and Italian seasoning (if using). Cook for another 2 minutes, allowing the sauce to thicken.
  5. Combine the Shrimp:
    • Return the cooked shrimp to the skillet. Toss everything together, ensuring the shrimp is coated with the creamy sauce.
    • Adjust seasoning with salt and pepper to taste.
  6. Serve:
    • Garnish with fresh basil or parsley.
    • Serve the creamy Tuscan shrimp over zucchini noodles, cauliflower rice, or enjoy it on its own!
