Home Made Keto Creamy Tuscan Shrimp

Ingredients:
- 1 lb (450g) large shrimp, peeled and deveined
- 2 tbsp olive oil
- 2 tbsp butter
- 3 cloves garlic, minced
- 1/2 cup heavy cream
- 1/4 cup chicken broth (or vegetable broth)
- 1/2 cup sun-dried tomatoes, chopped
- 2 cups spinach, fresh or frozen (thawed and drained)
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- 1 tsp Italian seasoning (optional)
- Fresh basil or parsley for garnish
Instructions:
- Cook the Shrimp:
- Heat 1 tbsp olive oil in a large skillet over medium heat.
- Add the shrimp and season with a pinch of salt and pepper.
- Cook for 2-3 minutes on each side until pink and opaque. Remove the shrimp from the skillet and set aside.
- Make the Creamy Sauce:
- In the same skillet, melt the butter and add the remaining 1 tbsp of olive oil.
- Add the minced garlic and sauté for about 1 minute until fragrant.
- Pour in the chicken broth, scraping the bottom of the skillet to release any browned bits.
- Stir in the heavy cream and bring it to a simmer. Let it cook for 2-3 minutes until it slightly thickens.
- Add Sun-Dried Tomatoes and Spinach:
- Stir in the chopped sun-dried tomatoes and spinach. Let it cook for a couple of minutes until the spinach wilts.
- Finish the Sauce:
- Stir in the Parmesan cheese and Italian seasoning (if using). Cook for another 2 minutes, allowing the sauce to thicken.
- Combine the Shrimp:
- Return the cooked shrimp to the skillet. Toss everything together, ensuring the shrimp is coated with the creamy sauce.
- Adjust seasoning with salt and pepper to taste.
- Serve:
- Garnish with fresh basil or parsley.
- Serve the creamy Tuscan shrimp over zucchini noodles, cauliflower rice, or enjoy it on its own!
