Ingredients

  • 1 cup cooked shredded chicken (or any leftover protein of your choice)
  • 2 tbsp cream cheese
  • 2 tbsp sour cream
  • 1 tbsp mayonnaise
  • 1 tbsp olive oil or butter
  • 1/4 cup grated mozzarella cheese
  • 1/4 cup chopped spinach or kale
  • 1 tbsp chopped green onions (optional)
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1/2 tsp chili flakes (optional, for a spicy kick)

Instructions

  1. Prepare the Base
    • Heat a pan over medium heat and add olive oil or butter.
    • Add the shredded chicken (or chosen protein) to the pan and sauté for 2-3 minutes until heated through.
  2. Create the Creamy Mixture
    • In a bowl, mix together cream cheese, sour cream, and mayonnaise until smooth.
    • Add garlic powder, salt, pepper, and chili flakes (if using) to the mixture.
  3. Combine and Melt
    • Add the creamy mixture to the chicken in the pan. Stir well to coat the chicken evenly.
    • Add spinach or kale and continue to cook until greens are wilted.
  4. Cheesy Finish
    • Sprinkle mozzarella cheese over the mixture. Cover and cook on low heat until the cheese melts and becomes gooey (1-2 minutes).
  5. Serve and Enjoy
    • Scoop the mixture into a bowl, garnish with green onions, and serve hot.

Tips

  • Add a squeeze of lemon juice for extra freshness.
  • For more texture, sprinkle some crushed pork rinds or toasted almond flour on top.
