Healthy Key Lime Pie

Ingredients:

For the Crust:

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 3 tablespoons melted coconut oil
  • 2 tablespoons maple syrup or honey (optional)
  • Pinch of salt

For the Filling:

  • 1 cup Greek yogurt (full-fat or low-fat)
  • 1/2 cup fresh key lime juice (regular lime juice can be used)
  • 2 teaspoons grated key lime zest
  • 1/3 cup honey or maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract

For Topping (optional):

  • Whipped coconut cream or Greek yogurt
  • Additional lime zest for garnish

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C).
  2. Make the Crust:
    • In a bowl, combine almond flour, coconut flour, melted coconut oil, maple syrup or honey (if using), and a pinch of salt. Press the mixture into the bottom of a pie dish to form the crust.
  3. Bake the Crust:
    • Bake the crust in the preheated oven for about 10-12 minutes or until it’s golden brown. Allow it to cool completely.
  4. Prepare the Filling:
    • In a large mixing bowl, whisk together Greek yogurt, key lime juice, key lime zest, honey or maple syrup, eggs, and vanilla extract until well combined.
  5. Bake the Pie:
    • Pour the filling into the cooled crust and smooth the top. Bake for 15-20 minutes or until the filling is set but still slightly jiggly in the center.
  6. Cool and Chill:
    • Allow the pie to cool at room temperature, then refrigerate for at least 2-3 hours or until fully chilled.
  7. Serve:
    • Once chilled, slice the pie and serve with whipped coconut cream or Greek yogurt. Garnish with additional lime zest if desired.
