Healthy Key Lime Pie
Ingredients:
For the Crust:
- 1 cup almond flour
- 1/4 cup coconut flour
- 3 tablespoons melted coconut oil
- 2 tablespoons maple syrup or honey (optional)
- Pinch of salt
For the Filling:
- 1 cup Greek yogurt (full-fat or low-fat)
- 1/2 cup fresh key lime juice (regular lime juice can be used)
- 2 teaspoons grated key lime zest
- 1/3 cup honey or maple syrup
- 2 large eggs
- 1 teaspoon vanilla extract
For Topping (optional):
- Whipped coconut cream or Greek yogurt
- Additional lime zest for garnish
Instructions:
- Preheat the Oven:
- Preheat your oven to 350°F (175°C).
- Make the Crust:
- In a bowl, combine almond flour, coconut flour, melted coconut oil, maple syrup or honey (if using), and a pinch of salt. Press the mixture into the bottom of a pie dish to form the crust.
- Bake the Crust:
- Bake the crust in the preheated oven for about 10-12 minutes or until it’s golden brown. Allow it to cool completely.
- Prepare the Filling:
- In a large mixing bowl, whisk together Greek yogurt, key lime juice, key lime zest, honey or maple syrup, eggs, and vanilla extract until well combined.
- Bake the Pie:
- Pour the filling into the cooled crust and smooth the top. Bake for 15-20 minutes or until the filling is set but still slightly jiggly in the center.
- Cool and Chill:
- Allow the pie to cool at room temperature, then refrigerate for at least 2-3 hours or until fully chilled.
- Serve:
- Once chilled, slice the pie and serve with whipped coconut cream or Greek yogurt. Garnish with additional lime zest if desired.
