Healthy Chicken Salad with Apples & Cranberries

Ingredients:-

  • 2 cups cooked chicken breast, diced
  • 1/2 cup non-fat Greek yogurt
  • 1/4 cup light mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 apple, diced (such as Granny Smith or Honeycrisp)
  • 1/4 cup dried cranberries (unsweetened if possible)
  • 1/4 cup celery, finely chopped
  • 2 tablespoons red onion, finely chopped
  • Salt and pepper to taste
  • Lettuce leaves (for serving, optional)

Instructions:-

  1. In a bowl, mix together the Greek yogurt, light mayonnaise, and Dijon mustard to create the dressing.
  2. Add the diced chicken breast, diced apple, dried cranberries, chopped celery, and chopped red onion into the dressing. Mix well to coat everything evenly.
  3. Season with salt and pepper to taste.
  4. Refrigerate for at least 30 minutes to allow the flavors to meld.
