Healthy Chicken Salad with Apples & Cranberries

Ingredients:-
- 2 cups cooked chicken breast, diced
- 1/2 cup non-fat Greek yogurt
- 1/4 cup light mayonnaise
- 1 tablespoon Dijon mustard
- 1 apple, diced (such as Granny Smith or Honeycrisp)
- 1/4 cup dried cranberries (unsweetened if possible)
- 1/4 cup celery, finely chopped
- 2 tablespoons red onion, finely chopped
- Salt and pepper to taste
- Lettuce leaves (for serving, optional)
Instructions:-
- In a bowl, mix together the Greek yogurt, light mayonnaise, and Dijon mustard to create the dressing.
- Add the diced chicken breast, diced apple, dried cranberries, chopped celery, and chopped red onion into the dressing. Mix well to coat everything evenly.
- Season with salt and pepper to taste.
- Refrigerate for at least 30 minutes to allow the flavors to meld.
