Grilled Bourbon Chicken
Ingredients:
- 4 boneless, skinless chicken breasts
- 1/4 cup bourbon
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 1/4 cup apple cider vinegar
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional for a bit of heat)
- 1/4 cup chopped green onions (for garnish)
Instructions:
- Prepare the Marinade:
- In a medium bowl, combine bourbon, soy sauce, brown sugar, apple cider vinegar, olive oil, minced garlic, grated ginger, black pepper, and red pepper flakes if using. Stir well until the sugar is dissolved and the ingredients are well combined.
- Marinate the Chicken:
- Place the chicken breasts in a large resealable plastic bag or a shallow dish.
- Pour the marinade over the chicken, ensuring all pieces are well coated.
- Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight for maximum flavor.
- Preheat the Grill:
- Preheat your grill to medium-high heat (about 375-400°F or 190-200°C).
- Grill the Chicken:
- Remove the chicken from the marinade, allowing excess marinade to drip off. Discard the remaining marinade.
- Place the chicken breasts on the preheated grill.
- Grill for about 6-7 minutes on each side or until the chicken is cooked through and has an internal temperature of 165°F (74°C). The cooking time may vary depending on the thickness of the chicken breasts.
- Serve:
- Remove the chicken from the grill and let it rest for a few minutes.
- Slice the chicken breasts and garnish with chopped green onions.
- Serve hot with your favorite side dishes.
Tips:
- For extra flavor, you can baste the chicken with fresh marinade (that hasn’t touched raw chicken) during the last few minutes of grilling.
- This marinade works well with chicken thighs or drumsticks too.
- If you don’t have a grill, you can cook the chicken in a grill pan or a skillet on the stovetop.
