Gluten Free, Low Carb Spinach Ricotta Pie

I can’t believe that I made this .

I am not a big cooker but sometimes things turn out surprisingly delicious .

This is my own version of gluten free, low carb type of quiche.

Ingredients:

Crust:

2 cups of almond flour

½ cup of olive oil

Water just enough to form a dough .

Salt

Simply whisky together the flour, salt and olive oil. Once the olive oil been incorporated add a little bit of water until a soft dough forms. You should be able to press the dough together to form a ball.

Transfer the dough to a a tart pan, press the dough into the bottom and sides of the pan , and bake for 15 min or until lightly golden.

Filling:

1 pack frozen spinach

1 onion

500 grams of ricotta

2 eggs

1/2 cup of Parmesan

Salt

Cook 1 pack of frozen spinach with onions in a pan.

Once is cooked add 2 eggs and 500 grams of ricotta, mix all together with a hand mixer.

Add parmesan and mix well

Pour int the almond crust and bake for about 30 minutes.

· If you fell adventurous you can add dry tomatoes, mushrooms, pine nuts in the filling.
