Gingered sweet potato and coconut milk stew with lentil & kale

Ingredients:

Produce

  • 1/2 cup Brown lentils
  • 1/2 tsp Chili flakes, dried
  • 1/2 tsp Coriander, ground
  • 3 cloves Garlic
  • 1 2-inch piece Ginger, fresh
  • 1 small bunch Kale
  • 1 1/2 lbs Sweet potatoes
  • 1 Yellow onion, medium small

Canned Goods

  • 1 13.5 oz (400 ml) can Coconut milk, full fat
  • 4 cups Vegetable stock

Baking & Spices

  • 1 Sea salt and ground black pepper
  • 1/2 tsp Turmeric, ground

Oils & Vinegars

  • 1 tbsp Coconut oil

Nuts & Seeds

  • 1/2 tsp Cumin, ground
