Gingered sweet potato and coconut milk stew with lentil & kale
Ingredients:

- 3 cloves Garlic
- 1 2-inch piece Ginger, fresh
- 1 small bunch Kale
- 1 1/2 lbs Sweet potatoes
- 1 Yellow onion, medium small
Canned Goods
- 1 13.5 oz (400 ml) can Coconut milk, full fat
- 4 cups Vegetable stock
Baking & Spices
- 1 Sea salt and ground black pepper
- 1/2 tsp Turmeric, ground
Oils & Vinegars
- 1 tbsp Coconut oil
