German Chocolate Sheet Cake

Ingredients:

For the Cake:
  • 2 cups almond flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup erythritol (or any preferred keto sweetener)
  • 1/2 cup butter (softened)
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup unsweetened almond milk (or any keto-friendly milk)
  • 1/2 cup strong brewed coffee (optional, enhances chocolate flavor)
For the Topping:
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup chopped pecans
  • 1/2 cup unsweetened heavy cream
  • 2 tablespoons butter
  • 1/4 cup powdered erythritol (or sweetener of choice)
  • 1/2 teaspoon vanilla extract
  • 1 ounce unsweetened chocolate (melted)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease a 9×13-inch sheet pan or line it with parchment paper.
  2. Prepare the Cake:
    • In a medium-sized bowl, combine the almond flour, cocoa powder, baking powder, baking soda, and salt.
    • In a large bowl, beat together the erythritol and softened butter until smooth and creamy. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
    • Gradually add the dry ingredients to the wet ingredients, alternating with the almond milk and brewed coffee, and mix until smooth.
    • Pour the batter into the prepared pan and spread it evenly.
    • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
    • Let the cake cool in the pan.
  3. Make the Topping:
    • In a saucepan over medium heat, combine the heavy cream, butter, and powdered erythritol. Stir until the butter melts and the mixture begins to simmer.
    • Reduce the heat and continue stirring until the mixture thickens slightly.
    • Remove from heat and stir in the vanilla extract and melted unsweetened chocolate.
    • Add the shredded coconut and chopped pecans to the mixture and stir until evenly combined.
  4. Assemble the Cake:
    • Once the cake has cooled, spread the topping evenly over the top.
    • Let the cake sit for a few minutes to allow the topping to set, then cut into squares and serve.
