German Chocolate Sheet Cake
Ingredients:
For the Cake:
- 2 cups almond flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup erythritol (or any preferred keto sweetener)
- 1/2 cup butter (softened)
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup unsweetened almond milk (or any keto-friendly milk)
- 1/2 cup strong brewed coffee (optional, enhances chocolate flavor)
For the Topping:
- 1/2 cup unsweetened shredded coconut
- 1/2 cup chopped pecans
- 1/2 cup unsweetened heavy cream
- 2 tablespoons butter
- 1/4 cup powdered erythritol (or sweetener of choice)
- 1/2 teaspoon vanilla extract
- 1 ounce unsweetened chocolate (melted)
Instructions:
- Preheat the Oven:
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch sheet pan or line it with parchment paper.
- Prepare the Cake:
- In a medium-sized bowl, combine the almond flour, cocoa powder, baking powder, baking soda, and salt.
- In a large bowl, beat together the erythritol and softened butter until smooth and creamy. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the almond milk and brewed coffee, and mix until smooth.
- Pour the batter into the prepared pan and spread it evenly.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan.
- Make the Topping:
- In a saucepan over medium heat, combine the heavy cream, butter, and powdered erythritol. Stir until the butter melts and the mixture begins to simmer.
- Reduce the heat and continue stirring until the mixture thickens slightly.
- Remove from heat and stir in the vanilla extract and melted unsweetened chocolate.
- Add the shredded coconut and chopped pecans to the mixture and stir until evenly combined.
- Assemble the Cake:
- Once the cake has cooled, spread the topping evenly over the top.
- Let the cake sit for a few minutes to allow the topping to set, then cut into squares and serve.
