Frozen Healthy Snickers
Ingredients:
For the Nougat Layer:
- 1 cup raw almonds
- 1 cup pitted dates
- 1 tablespoon almond butter
- 1 teaspoon vanilla extract
- Pinch of salt
For the Caramel Layer:
- 1 cup pitted dates
- 2 tablespoons almond butter
- 2 tablespoons coconut oil, melted
- 1 teaspoon vanilla extract
- Pinch of salt
For the Peanut Layer:
- 1 cup roasted unsalted peanuts
For the Chocolate Coating:
- 1 cup dark chocolate, melted
- 1 tablespoon coconut oil
Instructions:
For the Nougat Layer:
- Prepare Almonds: In a food processor, blend the raw almonds until they form a fine meal.
- Add Ingredients: Add the pitted dates, almond butter, vanilla extract, and a pinch of salt to the almond meal. Blend until the mixture forms a sticky dough.
- Press Into Pan: Press the nougat mixture into the bottom of a lined square baking dish to create the first layer.
For the Caramel Layer:
- Prepare Dates: Blend the pitted dates until they form a paste.
- Add Ingredients: Add almond butter, melted coconut oil, vanilla extract, and a pinch of salt to the date paste. Blend until smooth.
- Spread Over Nougat: Spread the caramel mixture evenly over the nougat layer.
For the Peanut Layer:
- Add Peanuts: Sprinkle the roasted unsalted peanuts evenly over the caramel layer.
For the Chocolate Coating:
- Melt Chocolate: In a heatproof bowl, melt the dark chocolate with coconut oil using a double boiler or in short bursts in the microwave, stirring until smooth.
- Pour Over Peanuts: Pour the melted chocolate over the peanuts, ensuring they are well coated.
- Freeze: Place the baking dish in the freezer for at least 4 hours or until completely frozen.
- Cut Into Bars: Once frozen, remove the mixture from the freezer and cut it into bars.
- Serve: Serve the Frozen Healthy Snickers bars straight from the freezer and enjoy!
