FRIED TO PERFECTION: CRUNCHY AIR FRYER CORNFLAKE CHICKEN

Air fryer cornflake chicken is a delicious and crunchy way to enjoy juicy chicken breasts. I love how it’s a healthier alternative to traditional fried chicken.

INGREDIENTS

  • 2 large chicken breast, sliced in half lengthwise.
  • 1 Tablespoon oil.
  • ½ cup mayonnaise.
  • 2 Tablespoons yellow mustard. I used Dijon mustard with white wine (Trader Joe’s).
  • ⅓ cup grated Parmesan cheese, optional.
  • 2 cups Cornflakes, crushed into fine crumbs.
  • ½ teaspoon garlic seasoning.
  • 1 teaspoon seasoning of choice. I used Vegeta all-purpose seasoning.
  • Salt and pepper to taste.

INSTRUCTIONS

  1. Slice two large chicken breasts in half lengthwise so you get four even breasts. Aim for approx. ½ inch in thickness. This recipe will also work with chicken tenders, chicken thighs, and chicken drumsticks. 
  2. Lightly brush the chicken with oil and season with salt pepper to taste, garlic, and seasoning of choice.
  3. Crush cornflakes in the blender to the fine crumbs. I used Hamilton beach mini food processor.
  4. Fully coat the seasoned chicken with mayo and mustard mixture.
  5. On a flat plate lay out the crushed cornflake crumbs and dip each chicken breast in crushed cornflakes (you can add grated  parmesan cheese to the cornflakes if you prefer)
  6. Cover each chicken piece in cornflakes completely and carefully place in the preheated air fryer at 390F (198C)
  7. Spritz each chicken piece lightly with spray oil. I’m using Ghee butter spray oil.
  8. Cook for 10-12 minutes, flipping halfway. Once turned on the other side, spray again and continue cooking for the remaining 5-6 minutes, until the internal temperature is at 165°F (74°C).
