Instructions:

  1. Prepare the Ingredients:
    • Cut the bacon into small pieces.
    • Chop the onion.
    • Mince the garlic.
    • Core and chop the cabbage.
  2. Cook the Bacon:
    • In a large skillet, cook the bacon over medium heat until it becomes crispy.
    • Remove the bacon with a slotted spoon and place it on a paper towel to drain, leaving the bacon fat in the skillet.
  3. Sauté the Onion and Garlic:
    • Add the chopped onion to the skillet with the bacon fat.
    • Sauté until the onion becomes translucent, about 5-7 minutes.
    • Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

    • Add the chopped cabbage to the skillet.
    • Stir well to coat the cabbage in the bacon fat and mix with the onions and garlic.
    • Season with salt, pepper, and smoked paprika if using.
    • Cook, stirring occasionally, until the cabbage is tender and slightly caramelized, about 10-15 minutes.
  5. Combine and Serve:
    • Return the crispy bacon to the skillet and stir to combine.
    • If using, add the apple cider vinegar and stir well.
    • Taste and adjust seasoning with additional salt and pepper if needed.
