Foil Salmon and Asparagus in Garlic Sauce – Easy Salmon Recipe

Ingredients:

  • 4 salmon fillets
  • 1 bunch asparagus, trimmed
  • 4 cloves garlic, minced
  • 4 tablespoons soy sauce (low-sodium)
  • 2 tablespoons honey or maple syrup
  • 2 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • 1 teaspoon sesame oil
  • Salt and pepper, to taste
  • Lemon wedges (for serving)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 400°F (200°C).
  2. Prepare the Foil Packets:
    • Cut four pieces of aluminum foil, each large enough to wrap around a salmon fillet and asparagus.
    • Place a salmon fillet in the center of each piece of foil and surround it with a handful of trimmed asparagus.
  3. Make the Garlic Sauce:
    • In a small bowl, whisk together minced garlic, soy sauce, honey (or maple syrup), olive oil, Dijon mustard, sesame oil, salt, and pepper.
  4. Pour the Sauce:
    • Spoon the garlic sauce evenly over each salmon fillet and asparagus bundle. Reserve a little sauce for basting.
  5. Wrap the Foil Packets:
    • Seal each foil packet by folding the edges over the salmon and asparagus, creating a tight seal.
  6. Bake in the Oven:
    • Place the foil packets on a baking sheet and bake in the preheated oven for about 15-20 minutes or until the salmon is cooked through and flakes easily with a fork.
  7. Baste and Broil (Optional):
    • Open the foil packets, baste the salmon with the reserved sauce, and broil for an additional 2-3 minutes until the top is slightly caramelized.
  8. Serve:
    • Carefully open the foil packets, transfer the salmon and asparagus to plates.
    • Drizzle any remaining sauce from the foil packets over the top.
    • Garnish with chopped fresh parsley and serve with lemon wedges.
