Sure, here’s a simple recipe for crispy potato pastry using just flour, water, and salt:
Ingredients:
- 1 cup all-purpose flour
- 1/4 teaspoon salt
- 1/4 cup water
- 1 medium-sized potato, peeled and grated
- Vegetable oil for frying
Instructions:
- In a mixing bowl, combine the flour and salt. Gradually add water while stirring, until a dough forms. You may need slightly more or less water depending on the humidity in your kitchen.
- Knead the dough on a lightly floured surface for a few minutes until it becomes smooth and elastic. Form it into a ball, cover it with a clean kitchen towel, and let it rest for about 5-10 minutes.
- While the dough is resting, grate the potato using a grater or food processor. Squeeze out any excess moisture from the grated potato using a clean kitchen towel or paper towels.
- Divide the dough into small balls, about the size of a golf ball. Roll each ball out into a thin circle, about 1/8 inch thick.
- Place a spoonful of grated potato in the center of each dough circle, leaving a small border around the edges.
- Fold the dough over the potato filling to create a half-moon shape, then seal the edges by pressing them together with your fingers or a fork.
- Heat vegetable oil in a frying pan over medium-high heat. Once the oil is hot, carefully add the pastries to the pan, a few at a time, making sure not to overcrowd the pan.
- Fry the pastries for 2-3 minutes on each side, or until they are golden brown and crispy.
- Remove the pastries from the pan and place them on a plate lined with paper towels to drain any excess oil.
- Serve the crispy potato pastries hot, with your favorite dipping sauce or enjoy them as they are.
