Light and Crispy Crab Bites

Ingredients:

  • 1 pound fresh crab meat
  • 3 slices of whole wheat bread, crusts removed (or use whole wheat breadcrumbs)
  • 1 egg, beaten
  • 1 tablespoon light mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1/2 tablespoon Old Bay Seasoning
  • 1/2 tablespoon dried parsley
  • Cooking spray or olive oil for frying (use minimal oil)
  • Lemon wedges for serving (optional)

Directions:

  1. In a food processor, pulse the whole wheat bread slices until they become fine breadcrumbs. Set them aside.
  2. In a large bowl, mix together the beaten egg, light mayonnaise, Dijon mustard, Worcestershire sauce, dried parsley, and half of the Old Bay Seasoning.
  3. Add the crab meat and breadcrumbs to the mixture. Gently combine the ingredients by hand to avoid breaking up too many lumps. While mixing, it’s acceptable to break up the very large lumps to help the crab bites hold together.
  4. Shape the mixture into 24 small balls. Ensure they’re compact but not too tightly packed.
  5. Heat a non-stick skillet over medium-high heat. Lightly spray the skillet with cooking spray or use minimal olive oil.
  6. Place the crab balls in the skillet, being mindful not to overcrowd them. Cook until they’re golden brown and crispy, turning once. This should take about 2-3 minutes per side.
  7. Once cooked, transfer the crab bites to a paper towel-lined plate to drain any excess oil.
  8. Serve your light and crispy crab bites with lemon wedges for a burst of fresh flavor, if desired.
