creamy vegan cauliflower alfredo


  • 1 medium head of cauliflower, chopped into florets
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 cup vegetable broth
  • 1/4 cup nutritional yeast
  • 1/4 cup unsweetened almond milk (or any plant-based milk of your choice)
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Optional: Fresh parsley or basil for garnish


  1. Steam the Cauliflower: Steam the cauliflower florets until they are tender, about 10-15 minutes.
  2. Sauté Garlic: In a small skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant. Remove from heat and set aside.
  3. Blend: In a blender or food processor, combine the steamed cauliflower, sautéed garlic, vegetable broth, nutritional yeast, almond milk, lemon juice, salt, and pepper. Blend until smooth and creamy. You may need to add more almond milk or vegetable broth to reach your desired consistency.
  4. Adjust Seasoning: Taste the sauce and adjust seasoning as needed, adding more salt, pepper, or lemon juice to taste.
  5. Serve: Serve the creamy cauliflower Alfredo sauce over cooked pasta of your choice. Garnish with fresh parsley or basil if desired.
