COFFEE JELLY
Ingredients
- 1 tablespoon unflavored gelatin (approx. 1 envelop)
- 2 cups brewed coffee (if using instant coffee: 3 tbsp coffee + 2 cups water)
- 2 tablespoon sugar
- 2 cups heavy cream
- 1 cup sweetened condensed milk (adjust as needed)
Instructions
- Make the coffee jelly. In a small bowl, pour the gelatin and add ¼ cup of cold water. Let it sit for 5 minutes – microwave for 30 seconds or until the gelatin is fully dissolved. Add coffee, sugar, and the gelatin mixture in a baking dish or shallow pan and let it set in the fridge for 4-5 hours or until it sets.
- Cut the jelly. Once set, cut the coffee jelly into cubes or your desired shape. If you have small cookie cutters, you can use them for fun shapes!
- Combine the ingredients. In a large bowl, add heavy cream, condensed milk, and coffee jelly cubes. Mix until well combined.
- Chill the coffee jelly. Chill the mixture for at least 3-4 hours or until fully cold. Optional, add ice if you want to eat it right away. Be warned, it will make the dessert less sweet.
Notes
- If you want a stronger coffee flavor, reduce the sugar when making the coffee jelly or use a dark roast brewed coffee.
- Adjust the sweetness by using less condensed milk for a milder taste, or more for extra sweetness.
- Adding ice to the coffee jelly mixture will let you enjoy it right away, but keep in mind that it will make the dessert less sweet.
STORAGE
Store any leftovers in an airtight container in the refrigerator for up to 5 days.
