Classic Beef Stew Recipe

Ingredients
- 2 lbs (900g) beef chuck, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 garlic cloves, minced
- 2 large carrots, sliced
- 3 large potatoes, peeled and cubed
- 2 stalks celery, chopped
- 3 tablespoons all-purpose flour
- 2 tablespoons tomato paste
- 4 cups beef broth
- 1 cup red wine (optional)
- 2 bay leaves
- 1 teaspoon dried thyme
- 1 teaspoon rosemary (fresh or dried)
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Prepare the Beef:
- Season the beef cubes with salt and pepper.
- Heat olive oil in a large pot or Dutch oven over medium-high heat.
- Brown the beef on all sides in batches (do not overcrowd the pot). Remove and set aside.
- Sauté the Vegetables:
- In the same pot, add chopped onions and cook until soft, about 5 minutes.
- Add minced garlic and cook for another minute.
- Add Flour and Tomato Paste:
- Sprinkle flour over the onions and garlic, stirring well for 1-2 minutes.
- Stir in the tomato paste and cook for an additional minute to enhance the flavor.
- Deglaze the Pot:
- Pour in the red wine (if using) to deglaze the pot, scraping up any browned bits from the bottom.
- Let it simmer for a minute.
- Add Broth and Seasonings:
- Return the beef to the pot.
- Add beef broth, bay leaves, thyme, and rosemary.
- Bring to a boil, then reduce heat to low. Cover and simmer for 1.5 to 2 hours, stirring occasionally.
- Add Vegetables:
- After 1.5 hours, add carrots, potatoes, and celery.
- Continue to simmer for another 30-40 minutes or until vegetables are tender.
- Adjust Seasoning:
- Taste the stew and adjust salt and pepper if needed.
- Finish and Serve:
- Discard the bay leaves.
- Garnish with chopped fresh parsley and serve hot.
