Classic Beef Stew Recipe

Ingredients

  • 2 lbs (900g) beef chuck, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 2 large carrots, sliced
  • 3 large potatoes, peeled and cubed
  • 2 stalks celery, chopped
  • 3 tablespoons all-purpose flour
  • 2 tablespoons tomato paste
  • 4 cups beef broth
  • 1 cup red wine (optional)
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon rosemary (fresh or dried)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Beef:
    • Season the beef cubes with salt and pepper.
    • Heat olive oil in a large pot or Dutch oven over medium-high heat.
    • Brown the beef on all sides in batches (do not overcrowd the pot). Remove and set aside.
  2. Sauté the Vegetables:
    • In the same pot, add chopped onions and cook until soft, about 5 minutes.
    • Add minced garlic and cook for another minute.
  3. Add Flour and Tomato Paste:
    • Sprinkle flour over the onions and garlic, stirring well for 1-2 minutes.
    • Stir in the tomato paste and cook for an additional minute to enhance the flavor.
  4. Deglaze the Pot:
    • Pour in the red wine (if using) to deglaze the pot, scraping up any browned bits from the bottom.
    • Let it simmer for a minute.
  5. Add Broth and Seasonings:
    • Return the beef to the pot.
    • Add beef broth, bay leaves, thyme, and rosemary.
    • Bring to a boil, then reduce heat to low. Cover and simmer for 1.5 to 2 hours, stirring occasionally.
  6. Add Vegetables:
    • After 1.5 hours, add carrots, potatoes, and celery.
    • Continue to simmer for another 30-40 minutes or until vegetables are tender.
  7. Adjust Seasoning:
    • Taste the stew and adjust salt and pepper if needed.
  8. Finish and Serve:
    • Discard the bay leaves.
    • Garnish with chopped fresh parsley and serve hot.
