Chicken stir fry with cauliflower rice

Ingredients:

For the Chicken Stir Fry:

  • 1 lb (450g) boneless, skinless chicken breasts, thinly sliced
  • 2 tablespoons olive oil or sesame oil
  • 2 cups mixed vegetables (e.g., bell peppers, broccoli, snap peas, carrots)
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (optional, for thickening)
  • 1/4 teaspoon red pepper flakes (optional, for heat)
  • 2 green onions, sliced (for garnish)
  • Sesame seeds (for garnish)

For the Cauliflower Rice:

  • 1 medium head of cauliflower, grated or processed into rice-sized pieces
  • 1 tablespoon olive oil or butter
  • Salt and pepper to taste

Instructions:

1. Prepare the Cauliflower Rice:

  1. Grate the cauliflower using a food processor or a box grater until it resembles rice.
  2. Heat 1 tablespoon of olive oil or butter in a large skillet over medium heat.
  3. Add the cauliflower rice and sauté for about 5-7 minutes, stirring occasionally, until tender. Season with salt and pepper to taste. Remove from heat and set aside.

2. Cook the Chicken Stir Fry:

  1. Heat 1 tablespoon of olive or sesame oil in a large skillet or wok over medium-high heat.
  2. Add the sliced chicken and cook for 5-6 minutes, or until browned and cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of oil. Add the mixed vegetables, garlic, and ginger. Stir-fry for 4-5 minutes until the vegetables are tender-crisp.
  4. In a small bowl, whisk together the soy sauce, honey (or maple syrup), rice vinegar, and red pepper flakes (if using). Pour the sauce over the vegetables and stir well.
  5. Add the cooked chicken back to the skillet. Mix everything well and cook for another 2-3 minutes. If you prefer a thicker sauce, add the cornstarch mixture and cook until the sauce has thickened.

3. Serve:

  1. Divide the cauliflower rice between plates.
  2. Top with the chicken stir fry.
  3. Garnish with sliced green onions and sesame seeds.
