Chicken Parmesan Air Fryer

Ingredients:

  • 2 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs (Italian seasoned breadcrumbs work well)
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Cooking spray (for the air fryer)
  • Salt and pepper, to taste
  • Fresh basil or parsley (for garnish)

Instructions:

  1. Preheat your air fryer to 375°F (190°C) for a few minutes.
  2. While the air fryer is preheating, prepare your chicken. Pound the chicken breasts to an even thickness of about 1/2 inch. This helps them cook evenly.
  3. Set up a breading station with three shallow bowls. In the first bowl, place the all-purpose flour. In the second bowl, add the beaten eggs. In the third bowl, place the breadcrumbs.
  4. Season the chicken breasts with salt and pepper on both sides.
  5. Take one chicken breast and coat it in flour, shaking off the excess. Dip it into the beaten eggs, allowing any excess to drip off, and then coat it in the breadcrumbs, pressing the breadcrumbs onto the chicken to adhere.
  6. Spray the air fryer basket with cooking spray to prevent sticking. Place the breaded chicken breast in the air fryer basket.
  7. Repeat the breading process with the second chicken breast.
  8. Spray the tops of the chicken breasts with a little more cooking spray. This will help them get crispy in the air fryer.
  9. Place the chicken breasts in the preheated air fryer and cook at 375°F (190°C) for about 12-15 minutes, flipping them halfway through the cooking time, or until they are golden brown and the internal temperature reaches 165°F (74°C).
  10. Once the chicken is cooked, remove it from the air fryer and place them on a plate. Top each chicken breast with marinara sauce, mozzarella cheese, and Parmesan cheese.
  11. Return the chicken to the air fryer and cook for an additional 2-3 minutes or until the cheese is melted and bubbly.
  12. Carefully remove the chicken from the air fryer, garnish with fresh basil or parsley, and serve hot..
