chicken parmesan


  • 4 boneless, skinless chicken breasts
  • salt and pepper, to taste
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup italian seasoned breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 1 jar (24 oz) marinara sauce
  • 2 cups shredded mozzarella cheese
  • fresh parsley, chopped (optional)
  • olive oil, for frying


  1. Preheat oven to 375°f.
  2. Season chicken breasts with salt and pepper on both sides.
  3. Place flour in a shallow dish, beaten eggs in another shallow dish, and breadcrumb and parmesan cheese mixture in a third shallow dish. Dip each chicken breast into the flour, shaking off any excess, then into the beaten eggs, and finally into the breadcrumb mixture, pressing the crumbs onto the chicken to help them adhere.
  4. Heat enough olive oil in a large skillet over medium-high heat to coat the bottom of the pan. Add chicken breasts and cook for 2-3 minutes per side, or until golden brown. Transfer chicken to a baking dish.
  5. Spoon marinara sauce over each chicken breast, spreading it evenly. Sprinkle shredded mozzarella cheese over the top of each chicken breast.
  6. Bake for 20-25 minutes, or until cheese is melted and bubbly and chicken is cooked through. Garnish with chopped parsley, if desired. Serve hot with your favorite pasta and vegetables on the side. Enjoy!
