CHICKEN MUSHROOM & ZUCCHINI BAKEI

Ingredients:

  • 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 medium zucchinis, sliced
  • 8 oz mushrooms, sliced
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup chicken broth
  • 1 cup heavy cream or half-and-half
  • 2 tablespoons olive oil
  • 2 teaspoons dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare the Chicken:
    • Season the chicken pieces with salt, pepper, dried thyme, and dried rosemary.
  3. Sear the Chicken:
    • In a large oven-safe skillet, heat olive oil over medium-high heat.
  • Add the seasoned chicken pieces and brown on all sides. Remove the chicken from the skillet and set it aside.
