CHICKEN MUSHROOM & ZUCCHINI BAKEI
Ingredients:
- 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 medium zucchinis, sliced
- 8 oz mushrooms, sliced
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 cup chicken broth
- 1 cup heavy cream or half-and-half
- 2 tablespoons olive oil
- 2 teaspoons dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Preheat the Oven:
- Preheat your oven to 375°F (190°C).
- Prepare the Chicken:
- Season the chicken pieces with salt, pepper, dried thyme, and dried rosemary.
- Sear the Chicken:
- In a large oven-safe skillet, heat olive oil over medium-high heat.
- Add the seasoned chicken pieces and brown on all sides. Remove the chicken from the skillet and set it aside.
