Cherry Cheesecake Jars:

Ingredients:

For the Cheesecake Filling:

  • 1 package (8 ounces) cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup plain Greek yogurt

For the Crust:

  • 1 cup graham cracker crumbs
  • 2 tablespoons unsalted butter, melted

For the Cherry Topping:

  • 1 can (21 ounces) cherry pie filling

Optional Toppings:

  • Whipped cream
  • Fresh mint leaves

Instructions:

  1. Prepare the Crust:
    • In a small bowl, mix the graham cracker crumbs and melted butter until well combined.
    • Press a tablespoon or two of the crumb mixture into the bottom of each jar to form the crust.
  2. Make the Cheesecake Filling:
    • In a separate bowl, beat the softened cream cheese until smooth.
    • Add the sugar and vanilla extract, continuing to beat until well combined.
    • Gently fold in the Greek yogurt until the mixture is creamy and smooth.
  3. Assemble the Jars:
    • Spoon or pipe a layer of the cheesecake filling over the graham cracker crust in each jar, leaving room for the cherry topping.
  4. Add the Cherry Topping:
    • Spoon a generous amount of cherry pie filling over the cheesecake layer in each jar.
  5. Chill:
    • Place the jars in the refrigerator to chill for at least 2 hours, allowing the cheesecake to set.
  6. Optional Toppings:
    • Before serving, you can add a dollop of whipped cream on top and garnish with fresh mint leaves for a decorative touch.
  7. Serve:
    • Serve the Cherry Cheesecake Jars chilled and enjoy the delightful combination of creamy cheesecake, sweet cherries, and buttery crust.
