Cheesecake Cups

Ingredients:

For the Crust:

  • 1 cup graham cracker crumbs
  • 2 tablespoons sugar
  • 1/4 cup melted butter

For the Cheesecake Filling:

  • 8 oz cream cheese (softened)
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream (chilled)

Optional Toppings:

  • Fresh fruit (strawberries, blueberries, raspberries)
  • Fruit compote or jam
  • Whipped cream
  • Chocolate shavings

Instructions:

  1. Prepare the Crust:
    • Preheat your oven to 325°F (163°C).
    • In a bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are well coated.
    • Spoon about 1-2 tablespoons of the mixture into the bottom of each cup or muffin tin (lined with paper cups or lightly greased). Press down gently to form an even crust.
    • Bake the crusts for about 5-7 minutes, or until golden brown. Remove from the oven and let them cool while you prepare the filling.
  2. Make the Cheesecake Filling:
    • In a large bowl, beat the softened cream cheese and powdered sugar until smooth and creamy.
    • Add the vanilla extract and mix to combine.
    • In a separate bowl, whip the chilled heavy cream with a hand mixer or stand mixer until soft peaks form.
    • Gently fold the whipped cream into the cream cheese mixture until combined.
  3. Assemble the Cheesecake Cups:
    • Spoon or pipe the cheesecake filling over the cooled graham cracker crusts. Smooth the tops with a spatula or spoon.
    • Refrigerate the cheesecake cups for at least 2 hours, or until set.
  4. Add Toppings:
    • Once the cheesecake is set, add your desired toppings like fresh fruit, fruit compote, or a dollop of whipped cream.
  5. Serve and Enjoy!
    • Serve the cheesecake cups chilled. They make a great individual-sized dessert for any occasion!
