Cheesecake Cups
Ingredients:
For the Crust:
- 1 cup graham cracker crumbs
- 2 tablespoons sugar
- 1/4 cup melted butter
For the Cheesecake Filling:
- 8 oz cream cheese (softened)
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream (chilled)
Optional Toppings:
- Fresh fruit (strawberries, blueberries, raspberries)
- Fruit compote or jam
- Whipped cream
- Chocolate shavings
Instructions:
- Prepare the Crust:
- Preheat your oven to 325°F (163°C).
- In a bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are well coated.
- Spoon about 1-2 tablespoons of the mixture into the bottom of each cup or muffin tin (lined with paper cups or lightly greased). Press down gently to form an even crust.
- Bake the crusts for about 5-7 minutes, or until golden brown. Remove from the oven and let them cool while you prepare the filling.
- Make the Cheesecake Filling:
- In a large bowl, beat the softened cream cheese and powdered sugar until smooth and creamy.
- Add the vanilla extract and mix to combine.
- In a separate bowl, whip the chilled heavy cream with a hand mixer or stand mixer until soft peaks form.
- Gently fold the whipped cream into the cream cheese mixture until combined.
- Assemble the Cheesecake Cups:
- Spoon or pipe the cheesecake filling over the cooled graham cracker crusts. Smooth the tops with a spatula or spoon.
- Refrigerate the cheesecake cups for at least 2 hours, or until set.
- Add Toppings:
- Once the cheesecake is set, add your desired toppings like fresh fruit, fruit compote, or a dollop of whipped cream.
- Serve and Enjoy!
