Chcken Fried Steaks (6 SmartPoints)

Ingredients:

  • 4 thin chicken breasts or chicken cutlets
  • 1 cup whole wheat flour
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 large eggs
  • 1/4 cup low-fat milk
  • 1 tbsp olive oil (for cooking)
  • 1/4 cup low-sodium chicken broth
  • Cooking spray

Directions:

  1. Prepare the Breading: In a shallow dish, mix whole wheat flour, garlic powder, onion powder, paprika, salt, and pepper. In another shallow dish, whisk together eggs and milk.
  2. Coat the Chicken: Dip each chicken breast into the egg mixture, ensuring it’s fully coated, then dredge in the seasoned flour mixture, pressing gently to coat.
  3. Cook the Chicken: Heat a non-stick skillet over medium-high heat and spray with cooking spray. Add olive oil. Once the oil is hot, cook the chicken cutlets for 4-5 minutes on each side or until golden brown and cooked through.
  4. Make the Gravy: Remove the chicken from the skillet and set aside. Pour the chicken broth into the skillet, scraping any bits from the pan. Let it simmer for 2 minutes until slightly thickened.
  5. Serve: Drizzle the gravy over the chicken fried steaks and enjoy!
