Cabbage Fat-burning Soup
Ingredients:
- 1 medium head of cabbage, chopped
- 1 large onion, chopped
- 2 celery stalks, chopped
- 1 bell pepper, chopped
- 2 medium tomatoes, diced
- 2 cloves garlic, minced
- 6 cups vegetable or chicken broth (low-sodium)
- 1 tsp ground turmeric
- 1 tsp ground cumin
- 1/2 tsp ground black pepper
- 1/2 tsp chili flakes (optional for heat)
- Salt to taste
- Fresh parsley (optional, for garnish)
- 1 tbsp olive oil (optional for sautéing)
Instructions:
- Prepare the Vegetables: Chop the cabbage, onion, celery, bell pepper, and tomatoes. Mince the garlic.
- Sauté the Aromatics: In a large pot, heat the olive oil (if using) over medium heat. Add the onions and garlic, and sauté until fragrant and translucent, about 3 minutes.
- Add the Broth and Vegetables: Add the chopped cabbage, celery, bell pepper, and tomatoes to the pot. Pour in the vegetable or chicken broth. Stir to combine.
- Season the Soup: Add the turmeric, cumin, black pepper, and chili flakes (if using). Season with salt to taste.
- Simmer the Soup: Bring the soup to a boil, then reduce the heat and let it simmer for 30-40 minutes, or until the vegetables are tender.
- Blend (optional): If you prefer a smoother texture, use an immersion blender to blend the soup to your desired consistency. Alternatively, you can leave it chunky for a hearty feel.
- Serve: Ladle the soup into bowls and garnish with fresh parsley if desired.
