Brownie muffins bites 1point per muffin
Ingredients:
- 1 cup unsweetened applesauce
- 1/2 cup unsweetened cocoa powder
- 1/2 cup all-purpose flour
- 1/2 cup granulated sugar substitute (such as erythritol or Stevia)
- 1/4 cup plain non-fat Greek yogurt
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions:
- Preheat the Oven:
- Preheat your oven to 350°F (175°C). Line a mini muffin tin with paper liners.
- Mix Dry Ingredients:
- In a bowl, whisk together cocoa powder, flour, baking powder, and salt.
- Combine Wet Ingredients:
- In another bowl, whisk together applesauce, sugar substitute, Greek yogurt, eggs, and vanilla extract until well combined.
- Combine Wet and Dry Mixtures:
- Add the wet ingredients to the dry ingredients and mix until just combined. Be careful not to overmix.
- Fill Muffin Cups:
- Spoon the batter into the mini muffin cups, filling each about 3/4 full.
- Bake:
- Bake in the preheated oven for 10-12 minutes or until a toothpick inserted into the center comes out with moist crumbs but not wet batter.
- Cool:
- Allow the brownie muffin bites to cool in the muffin tin for a few minutes, then transfer them to a wire rack to cool completely.
- Serve:
- Once cooled, serve and enjoy your 1-point brownie muffin bites!
