Bread pudding in the air fryer
Ingredients:
400g of white bread (including crusts if preferred)
600ml milk
450g dried fruit (raisins and currants)
100g sugar
50g self-raising flour
1.5 tbsp of mixed spice
2 beaten eggs
100ml melted butter
Instructions:
Tear up the 400g of white bread into small pieces and place them in a large bowl. You can include the crusts or remove them, depending on your preference.
Add 600ml of milk to the bread in the bowl and allow it to soak for 10 minutes. Use your hands or a wooden spoon to mash it all up and combine.
Stir in 450g of dried fruit, 100g of sugar, 50g of self-raising flour, and 1.5 tablespoons of mixed spice into the bread and milk mixture.
Add the 2 beaten eggs and 100ml of melted butter to the mixture and mix everything well.
Transfer the mixture into a baking tin suitable for the air fryer. Make sure it fits comfortably in your air fryer basket.
Preheat your air fryer to 150°C.
Place the baking tin with the pudding mixture in the air fryer basket.
Cook for about 30-35 minutes at 150°C. Check it occasionally to ensure it’s cooking evenly.
After 30-35 minutes, increase the temperature to 180°C and cook for an additional 5-10 minutes until the pudding browns and sets.
Once the pudding is golden and set, remove it from the air fryer.
Allow it to cool slightly, and then slice and serve. It’s excellent when enjoyed warm with custard or eaten cold.
