Big Boys Fresh Strawberry Pie

Ingredients:

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the Filling:

  • 1 quart fresh strawberries, hulled and halved
  • 1 cup granulated sugar
  • 3 tablespoons cornstarch
  • 1 cup water
  • 1 package (3 oz) strawberry gelatin
  • Whipped cream, for topping (optional)

Instructions:

For the Crust:

  1. Preheat Oven: Preheat your oven to 350°F (175°C).
  2. Mix Ingredients: In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated with the butter.
  3. Form the Crust: Press the crumb mixture firmly into the bottom and up the sides of a 9-inch pie dish.
  4. Bake: Bake the crust for about 8-10 minutes, or until it’s lightly golden. Allow it to cool completely before adding the filling.

For the Filling:

  1. Prepare Strawberries: Arrange the strawberry halves in the cooled pie crust.
  2. Make the Glaze: In a medium saucepan, combine the granulated sugar, cornstarch, and water. Cook over medium heat, stirring constantly, until the mixture thickens and becomes clear.
  3. Add Gelatin: Remove the saucepan from the heat and stir in the strawberry gelatin until it’s completely dissolved.
  4. Cool the Glaze: Allow the glaze to cool slightly, then pour it evenly over the strawberries in the pie crust.
  5. Chill: Refrigerate the pie for at least 2-3 hours, or until the filling is set.

To Serve:

  • Garnish: Serve the pie topped with whipped cream, if desired…
