Baked Salmon in Foil with Asparagus and Lemon Garlic Butter Sauce

Ingredients:

  • 4 salmon fillets (about 6 ounces each)
  • 1 bunch of asparagus, trimmed
  • 4 tablespoons butter, melted
  • 4 cloves garlic, minced
  • 1 lemon, thinly sliced
  • 2 tablespoons fresh lemon juice
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Extra virgin olive oil

Instructions:

  1. Preheat your oven: Preheat your oven to 375°F (190°C).
  2. Prepare the foil: Tear off four large pieces of aluminum foil, big enough to wrap each salmon fillet and asparagus. Place the foil on a baking sheet.
  3. Season the salmon and asparagus: Place the salmon fillets in the center of each piece of foil. Arrange the trimmed asparagus around the salmon. Drizzle some olive oil over the salmon and asparagus, then season with salt and pepper to taste.
  4. Make the lemon garlic butter sauce: In a small bowl, mix together the melted butter, minced garlic, and lemon juice.
  5. Pour the sauce over the salmon: Spoon the lemon garlic butter sauce evenly over each salmon fillet. Place a couple of lemon slices on top of each fillet.
  6. Wrap the foil: Carefully wrap each foil packet, ensuring that it’s sealed tightly to trap the steam while baking.
  7. Bake: Place the foil packets on the baking sheet in the preheated oven. Bake for about 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
  8. Serve: Carefully open the foil packets, being cautious of the steam. Transfer the salmon and asparagus to plates, spooning any remaining sauce from the foil packets over the top. Garnish with chopped parsley if desired.
  9. Enjoy: Serve your delicious baked salmon with asparagus and lemon garlic butter sauce immediately. It pairs well with rice, quinoa, or a side salad.
