Air fryer herb-roasted baby potatoes

Ingredients:

  • 1 pound baby potatoes, halved
  • 2 tablespoons olive oil
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions:

  1. Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes.
  2. Prepare the Potatoes: In a large bowl, toss the halved baby potatoes with olive oil, rosemary, thyme, oregano, minced garlic, salt, and pepper. Make sure the potatoes are evenly coated with the herbs and oil.
  3. Air Fry: Place the seasoned potatoes in the air fryer basket in a single layer. Cook at 400°F (200°C) for 15-20 minutes, shaking the basket halfway through cooking to ensure even roasting. The potatoes should be golden and crispy on the outside and tender on the inside.
  4. Serve: Remove the potatoes from the air fryer and garnish with fresh chopped parsley if desired. Serve hot as a side dish.
