Air Fryer Chicken Fajitas

Ingredients:

  • 1 pound boneless, skinless chicken breasts, thinly sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 2 tablespoons olive oil
  • 2-3 tablespoons fajita seasoning (store-bought or homemade)
  • Salt and pepper to taste
  • Flour tortillas, for serving
  • Optional toppings: sour cream, salsa, guacamole, shredded cheese, and lime wedges

Instructions:

  1. Preheat your air fryer to 375°F (190°C) for a few minutes.
  2. In a large mixing bowl, combine the sliced chicken, sliced bell peppers, and sliced onions.
  3. Drizzle the olive oil over the chicken and vegetables and sprinkle the fajita seasoning, salt, and pepper on top. Toss everything together to coat the chicken and veggies evenly with the seasoning and oil.
  4. Place the chicken and vegetable mixture into the air fryer basket in a single layer. It’s important not to overcrowd the basket to ensure even cooking. If necessary, you may need to cook in batches.
  5. Cook the chicken fajitas in the air fryer for about 10-12 minutes, shaking or stirring the basket every 5 minutes to ensure even cooking. The chicken should be cooked through, and the veggies should be tender with a slightly charred appearance.
  6. While the chicken and veggies are cooking, you can warm your flour tortillas in the air fryer for about 1-2 minutes until they’re soft and pliable.
  7. Once the chicken fajitas are done, remove them from the air fryer, and serve them with the warm tortillas and your favorite toppings. You can also squeeze some fresh lime juice over the fajitas for extra flavor.
