Air Fryer Cauliflower Pancakes
Ingredients:
- 1 medium cauliflower head (about 4 cups, grated or processed)
- 1/4 cup almond flour (or any flour of choice)
- 1/4 cup grated Parmesan cheese
- 2 large eggs
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- Olive oil spray
Instructions:
- Prepare the cauliflower:
- Remove the stem and leaves from the cauliflower. Grate or pulse it in a food processor until it resembles rice.
- Microwave the cauliflower rice for 4-5 minutes or until tender. Let it cool slightly, then place it in a clean towel or cheesecloth and squeeze out as much moisture as possible.
- Mix the ingredients:
- In a bowl, combine the cauliflower, almond flour, Parmesan cheese, eggs, garlic powder, onion powder, salt, and pepper. Stir until well mixed.
- Form pancakes:
- Shape the mixture into small pancakes, about 2-3 inches in diameter.
- Air fry:
- Preheat your air fryer to 370°F (190°C). Lightly spray the air fryer basket with olive oil.
- Place the cauliflower pancakes in a single layer in the basket. Lightly spray the top with olive oil.
- Air fry for 8-10 minutes, flipping halfway, until golden brown and crispy.
- Serve:
- Enjoy your cauliflower pancakes with a dollop of sour cream, yogurt, or your favorite dipping sauce!
