Air Fryer Cauliflower Pancakes

Ingredients:

  • 1 medium cauliflower head (about 4 cups, grated or processed)
  • 1/4 cup almond flour (or any flour of choice)
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Olive oil spray

Instructions:

  1. Prepare the cauliflower:
    • Remove the stem and leaves from the cauliflower. Grate or pulse it in a food processor until it resembles rice.
    • Microwave the cauliflower rice for 4-5 minutes or until tender. Let it cool slightly, then place it in a clean towel or cheesecloth and squeeze out as much moisture as possible.
  2. Mix the ingredients:
    • In a bowl, combine the cauliflower, almond flour, Parmesan cheese, eggs, garlic powder, onion powder, salt, and pepper. Stir until well mixed.
  3. Form pancakes:
    • Shape the mixture into small pancakes, about 2-3 inches in diameter.
  4. Air fry:
    • Preheat your air fryer to 370°F (190°C). Lightly spray the air fryer basket with olive oil.
    • Place the cauliflower pancakes in a single layer in the basket. Lightly spray the top with olive oil.
    • Air fry for 8-10 minutes, flipping halfway, until golden brown and crispy.
  5. Serve:
    • Enjoy your cauliflower pancakes with a dollop of sour cream, yogurt, or your favorite dipping sauce!
