Air Fryer Butternut Squash Halves

Ingredients:

  • 1 medium-sized butternut squash
  • Olive oil
  • Salt and pepper, to taste
  • Optional seasonings: paprika, garlic powder, rosemary, or thyme

Instructions:

  1. Preheat your air fryer to 375°F (190°C) for a few minutes.
  2. While the air fryer is preheating, prepare the butternut squash. Wash the squash and cut it in half lengthwise. Scoop out the seeds and pulp from the center using a spoon.
  3. Brush the cut sides of the butternut squash with olive oil. This will help the squash get crispy and develop a nice texture.
  4. Season the squash halves with salt and pepper. You can also add any optional seasonings like paprika, garlic powder, rosemary, or thyme for added flavor.
  5. Place the butternut squash halves in the preheated air fryer basket, cut side down. You may need to do this in batches if your air fryer is small or if you’re cooking multiple squash halves.
  6. Air fry the squash at 375°F (190°C) for about 20-25 minutes, depending on the size and thickness of the squash. Check for doneness by inserting a fork or knife into the flesh. It should be tender and easily pierced.
  7. If the squash isn’t fully cooked after the initial cooking time, you can continue air frying it in 5-minute increments until it’s done.
  8. Once the butternut squash halves are cooked to your desired tenderness and have a crispy exterior, remove them from the air fryer.
  9. Let the squash cool for a minute or two, as it will be very hot. Then, slice it into smaller pieces or serve it as halves, depending on your preference.
  10. Serve the air-fried butternut squash as a side dish or use it in various recipes, such as salads, grain bowls, or as a simple and healthy snack.
