Air Fryer BANANA CAKE

Ingredients:

  • 2 ripe bananas, mashed
  • 1/2 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Optional: chopped nuts, chocolate chips, or dried fruit for topping

Instructions:

  1. Preheat your air fryer to 320°F (160°C) for 5 minutes.
  2. In a mixing bowl, combine the mashed bananas, melted butter, sugar, eggs, and vanilla extract. Mix until well combined.
  3. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  5. Grease a small cake pan or baking dish that fits into your air fryer basket. Pour the batter into the prepared pan and spread it evenly.
  6. If desired, sprinkle chopped nuts, chocolate chips, or dried fruit over the top of the batter.
  7. Place the cake pan into the preheated air fryer basket.
  8. Air fry the banana cake at 320°F (160°C) for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  9. Once done, carefully remove the cake from the air fryer and allow it to cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
  10. Slice and serve the banana cake on its own or with a dollop of whipped cream or a scoop of vanilla ice cream.
