1- medium zucchini
1- egg beaten
1/2 c almond flour
1/2 c Parmesan cheese
1- tsp Italian seasoning
Salt and pepper to taste
Cut zucchini into fry strips – lay on paper towel to absorb as much moisture as possible before breading.
Combine flour, cheese, spices in shallow bowl.
Dredge zucchini in egg and then almond flour mixture. Place on baking dish/rack.
Air fry for 10 minutes at 400 F, or until crispy
