Air-fried milk

This easy air fryer dessert pays homage to a traditional Chinese dessert, fried milk. It’s also similar to the Spanish version ‘leche frita’, Italy’s deep-fried custard ‘crema fritta’ and South Africa’s traditional milk tart (or ‘milktert’). Crispy on the outside, soft and custard-like on the inside, this cinnamon sugar-dusted sweet treat will soon become one of your favourite recipes.

  • 1.2L milk
  • 2 cinnamon sticks
  • 2 strips lemon rind
  • 4 eggs
  • 2 egg yolks
  • 215g (1 cup) caster sugar
  • 140g (1 cup) cornflour
  • 2 tsp vanilla extract
  • 120g (3/4 cup) plain flour
  • Cinnamon sugar, to sprinkle

  • Step 1Grease and line a 20cm x 30cm lamington pan with baking paper.
  • Step 2Place milk, cinnamon and lemon rind in a medium saucepan and bring to a simmer over medium heat.
  • Step 3Whisk eggs, yolks, caster sugar, cornflour and vanilla in a large bowl until well combined. Strain milk mixture over egg mixture and whisk until combined. Discard cinnamon sticks and rind.
  • Step 4Return milk mixture to a cleaned medium saucepan. Cook, stirring constantly, over medium-low heat for 5 minutes or until mixture bubbles and thickens (see note).
  • Step 5Pour milk mixture into prepared pan and smooth top. Cool completely and place in fridge for 3 hours or until firm.
  • Step 6Turn milk mixture out onto a chopping board. Cut into 3.5cm squares. Coat each square in flour, shaking off excess.
  • Step 7Spray the basket of an air fryer with oil. Add some milk squares to fryer and spray with oil. Cook on 200C for 10 minutes or until golden. Repeat with remaining milk squares.
  • Step 8Sprinkle milk squares with cinnamon sugar and serve.
