Ingredients:

  • 1 ½ cups almond flour

  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1/4 cup butter, melted (you can use ghee for a richer flavor)
  • 1/4 tsp garlic powder (optional for extra flavor)
  • 1/2 tsp salt
  • 1/4 tsp baking powder
  • 1/4 cup heavy cream (optional for extra richness)

Instructions:

  1. Preheat the oven: Set the oven to 375°F (190°C). Line a mini muffin tin or a regular muffin tin with paper liners, or grease it lightly with butter or non-stick spray.
  2. Mix the ingredients:
    • In a large mixing bowl, combine the almond flour, mozzarella cheese, Parmesan cheese, garlic powder (if using), salt, and baking powder. Mix everything well.
    • Add the melted butter, eggs, and heavy cream (if using) to the dry ingredients. Stir everything together until the mixture is smooth and fully combined. The batter will be thick and sticky.
  3. Fill the muffin tin:
    • Spoon the batter into the muffin tin, filling each cup nearly to the top. The batter will spread out a bit as it bakes, so it’s okay if it’s filled a little high.
  4. Bake:
    • Place the muffin tin in the oven and bake for about 15-20 minutes, or until the tops of the cheese breads are golden brown and slightly puffed.
  5. Cool and serve:
    • Once baked, remove the cheese breads from the oven and let them cool for a few minutes before serving. These are best served warm for the full cheesy experience!
