Keto Chocolate Chip Cheesecake Bars

Ingredients:

For the Crust:

  • 1 ½ cups almond flour
  • ¼ cup melted butter
  • 2 tbsp powdered erythritol (or any keto-friendly sweetener)
  • ½ tsp vanilla extract

For the Cheesecake Layer:

  • 8 oz (225g) cream cheese, softened
  • ¼ cup powdered erythritol
  • 1 large egg
  • ½ tsp vanilla extract

For the Chocolate Chip Layer:

  • ½ cup sugar-free chocolate chips
  • ¼ cup almond flour
  • 2 tbsp butter, melted
  • 1 tbsp powdered erythritol
  • ½ tsp vanilla extract

Instructions:

1️⃣ Preheat Oven to 325°F (163°C) and line an 8×8-inch baking dish with parchment paper.

2️⃣ Make the Crust: Mix almond flour, melted butter, sweetener, and vanilla. Press into the dish and bake for 8-10 minutes until slightly golden. Let cool.

3️⃣ Prepare Cheesecake Layer: Beat cream cheese, sweetener, egg, and vanilla until smooth. Spread over the crust.

4️⃣ Make Chocolate Chip Topping: Mix almond flour, melted butter, sweetener, vanilla, and chocolate chips. Crumble over the cheesecake layer.

5️⃣ Bake for 20-25 minutes until set. Let it cool, then chill in the fridge for at least 2 hours before slicing.
