Banana Fudge

3 ripe bananas, mashed
1/2 cup unsalted butter
2 cups granulated sugar
1/2 cup whole milk
1 teaspoon vanilla extract
2 cups white chocolate chips
1 cup chopped walnuts (optional)

Directions:

Line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal.
In a saucepan over medium heat, combine mashed bananas, unsalted butter, granulated sugar, and whole milk.
Stirring constantly, bring the mixture to a boil.
Once boiling, reduce the heat to medium-low and continue to cook, stirring occasionally, for 10-12 minutes or until the mixture thickens and reaches the soft ball stage (235°F/118°C on a candy thermometer).
Remove the saucepan from heat and stir in vanilla extract and white chocolate chips until smooth and fully melted.
If desired, fold in chopped walnuts for added texture.
Pour the mixture into the prepared baking dish, spreading it evenly.
Allow the fudge to cool at room temperature for about 2 hours, then transfer to the refrigerator to chill for an additional 2 hours or until set.
Once set, use the parchment paper overhang to lift the fudge out of the baking dish.
Cut into squares and serve. Enjoy the creamy and decadent banana fudge!
