glazed meatballs, brussel sprouts with caramelized onion and mashed potatoes
Ingredients
1/4 cup hoisin sauce
1/4 cup coconut aminos
1 tsp sesame seeds
1 tbsp sesame oil
2 tbsp rice wine vinegar
2 cloves minced garlic
2 tbsp honey
1 tbsp fresh grated ginger
For the meatball:
1 pk impossible burger
2 cloves garlic
4 tbsp breadcrumbs
2 tbsp flax meal (or 1 chia egg)
2 tbsp of the glaze you just made for the meatballs
2 chopped green onions
Garlic powder
Onion powder
Mushroom umami seasoning
1 tsp liquid smoke
Form into meatballs. (Mine made 15 meatballs)
Bake at 425° oven for 15 min. Pour over glaze and bake an additional 5 min.
I shaved the brussel sprouts and sautéed in Grapeseed oil, salt and pepper. The mashed potatoes i used almond milk, country crock plant butter, coconut yogurt alternative, salt and pepper.
