Home Made Keto LOAD STEAK QUESADILLAS

Ingredients:

For the Steak:

  • 1 lb ribeye steak (or any preferred cut)
  • 1 tbsp olive oil or avocado oil
  • Salt and pepper to taste
  • 1 tsp garlic powder
  • 1 tsp smoked paprika

For the Quesadilla Filling:

  • 1 ½ cups shredded cheese (cheddar, mozzarella, or a blend)
  • ½ small onion, sliced thinly
  • 1 bell pepper, sliced (optional for more texture)
  • 2 tbsp sour cream
  • 1 avocado, sliced or mashed
  • 2 tbsp fresh cilantro, chopped
  • 1 jalapeño (optional, for a kick), sliced

For the Keto Tortilla:

  • 1 cup shredded mozzarella cheese
  • 1 egg
  • 1 tbsp almond flour
  • 1 tsp psyllium husk (optional for more pliability)

Instructions:

1. Cook the Steak:

  • Season the steak: Rub the ribeye with olive oil, salt, pepper, garlic powder, and smoked paprika.
  • Cook the steak: Heat a skillet over medium-high heat. Sear the steak for 3-4 minutes per side, depending on how thick it is and your desired doneness. Once cooked, set aside to rest for 5 minutes, then slice thinly.

2. Make the Keto Tortillas:

  • Melt mozzarella: In a microwave-safe bowl, melt the mozzarella cheese for about 1 minute or until fully melted.
  • Mix in egg and almond flour: Once the mozzarella is melted, stir in the egg, almond flour, and psyllium husk (if using). Mix until a dough forms.
  • Cook the tortillas: Heat a nonstick skillet over medium heat. Divide the dough into two portions, roll or press them flat between parchment paper. Cook each tortilla for 2-3 minutes per side or until golden brown.

3. Assemble the Quesadillas:

  • Saute onions and peppers: In the same skillet used for the steak, sauté onions and bell peppers for 3-4 minutes until soft.
  • Build the quesadilla: Lay one keto tortilla on the skillet over low heat. Add a layer of cheese, some steak slices, onions, peppers, jalapeños, and more cheese. Top with the other tortilla.
  • Cook the quesadilla: Let it cook for 3-4 minutes on each side until the cheese is melted and the tortilla is crispy.

4. Serve:

  • Slice and garnish: Slice the quesadilla into quarters. Top with sour cream, avocado slices or guacamole, and fresh cilantro.
