Chicken stir fry with cauliflower rice

Ingredients:
For the Chicken Stir Fry:
- 1 lb (450g) boneless, skinless chicken breasts, thinly sliced
- 2 tablespoons olive oil or sesame oil
- 2 cups mixed vegetables (e.g., bell peppers, broccoli, snap peas, carrots)
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1/4 cup soy sauce (or tamari for gluten-free)
- 2 tablespoons honey or maple syrup
- 1 tablespoon rice vinegar
- 1 tablespoon cornstarch mixed with 2 tablespoons water (optional, for thickening)
- 1/4 teaspoon red pepper flakes (optional, for heat)
- 2 green onions, sliced (for garnish)
- Sesame seeds (for garnish)
For the Cauliflower Rice:
- 1 medium head of cauliflower, grated or processed into rice-sized pieces
- 1 tablespoon olive oil or butter
- Salt and pepper to taste
Instructions:
1. Prepare the Cauliflower Rice:
- Grate the cauliflower using a food processor or a box grater until it resembles rice.
- Heat 1 tablespoon of olive oil or butter in a large skillet over medium heat.
- Add the cauliflower rice and sauté for about 5-7 minutes, stirring occasionally, until tender. Season with salt and pepper to taste. Remove from heat and set aside.
2. Cook the Chicken Stir Fry:
- Heat 1 tablespoon of olive or sesame oil in a large skillet or wok over medium-high heat.
- Add the sliced chicken and cook for 5-6 minutes, or until browned and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of oil. Add the mixed vegetables, garlic, and ginger. Stir-fry for 4-5 minutes until the vegetables are tender-crisp.
- In a small bowl, whisk together the soy sauce, honey (or maple syrup), rice vinegar, and red pepper flakes (if using). Pour the sauce over the vegetables and stir well.
- Add the cooked chicken back to the skillet. Mix everything well and cook for another 2-3 minutes. If you prefer a thicker sauce, add the cornstarch mixture and cook until the sauce has thickened.
3. Serve:
- Divide the cauliflower rice between plates.
- Top with the chicken stir fry.
- Garnish with sliced green onions and sesame seeds.
