Ingredients:

For the Cheesecake Mixture:

  • 8 oz (1 package) cream cheese, softened
  • 1/2 cup heavy whipping cream
  • 1/4 cup powdered erythritol (or your preferred keto-friendly sweetener, adjust to taste)
  • 1 tsp vanilla extract

For the Fruit Salad:

  • 1 cup strawberries, hulled and sliced
  • 1 cup blueberries
  • 1 cup raspberries
  • 1/2 cup blackberries
  • (Optional) 1/4 cup chopped nuts (like pecans or walnuts) for added crunch

Instructions:

  1. Prepare the Cheesecake Mixture:
    • In a large mixing bowl, beat the softened cream cheese with a hand mixer until smooth and creamy.
    • Add the heavy whipping cream, powdered erythritol, and vanilla extract. Beat until the mixture is fluffy and well combined. Taste and adjust sweetness if necessary.
  2. Prepare the Fruit Salad:
    • Wash and prepare the berries. Pat them dry to remove excess water.
  3. Combine:
    • Gently fold the berries into the cheesecake mixture until everything is well coated.
  4. Chill:
    • Cover and refrigerate for at least 1 hour to let the flavors meld and the mixture to firm up a bit.
  5. Serve:
    • Serve chilled, optionally topped with chopped nuts for added texture and flavor.
