KETO CRACK CHICKEN IN THE CROCK POT
Ingredients:
- 2 lbs (900 g) chicken breasts or thighs (boneless, skinless)
- 1 packet (1 oz or 28 g) ranch seasoning mix (make sure it’s low-carb)
- 1 packet (1 oz or 28 g) ranch dip mix (optional for extra flavor, also low-carb)
- 8 oz (225 g) cream cheese (cubed)
- 1 cup (240 ml) chicken broth
- 1/2 cup (120 ml) heavy cream
- 1 cup (100 g) shredded cheddar cheese
- 6-8 slices of cooked bacon (crumbled)
- 2 green onions (chopped, for garnish)
- Salt and pepper to taste

- Prepare the Chicken:
- Place the chicken breasts or thighs in the Crock Pot.
- Add Seasonings and Cream Cheese:
- Sprinkle the ranch seasoning mix (and optional ranch dip mix) over the chicken.
- Add the cubed cream cheese on top of the chicken.
- Add Liquids:
- Pour the chicken broth over the chicken and cream cheese.
- Cook:
- Cover and cook on low for 6-7 hours, or on high for 3-4 hours, until the chicken is tender and easily shredded.
- Shred the Chicken:
- Once cooked, shred the chicken in the Crock Pot using two forks.
- Add Cheese and Cream:
- Stir in the heavy cream and shredded cheddar cheese. Mix well until the cheese is melted and the mixture is creamy.
- Add Bacon:
- Stir in the crumbled bacon.
- Season and Garnish:
- Taste and adjust seasoning with salt and pepper as needed.
- Garnish with chopped green onions.
Serving Suggestions:
- Serve over a bed of cauliflower rice or alongside steamed vegetables.
- You can also use it as a filling for lettuce wraps or low-carb tortillas.
