Instructions

  1. Combine Dry Ingredients:
    • In a large mixing bowl, whisk together almond flour, coconut flour, xanthan gum, baking powder, and salt.
  2. Mix Wet Ingredients:
    • In a separate bowl, beat the eggs, then add warm water and olive oil (or melted butter). Mix well.
  3. Form the Dough:
    • Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms. The dough should be firm but pliable. If it’s too sticky, add a bit more almond flour. If it’s too dry, add a little more water, a teaspoon at a time.
  4. Knead the Dough:
    • Turn the dough out onto a piece of parchment paper or a lightly floured surface (using almond flour) and knead it a few times to ensure all ingredients are well incorporated.
  5. Divide and Roll:
    • Divide the dough into 8 equal portions for large tortillas. Roll each portion into a ball.
    • Place each ball between two sheets of parchment paper and roll out into a thin, round tortilla, about 8 inches in diameter.
  6. Cook the Tortillas:
    • Heat a non-stick skillet or griddle over medium heat.
    • Carefully peel off the top layer of parchment paper and place the tortilla in the skillet (parchment side up). After a few seconds, gently peel off the remaining parchment paper.
    • Cook for about 1-2 minutes on each side, or until lightly browned and cooked through.
  7. Cool and Store:
    • Transfer cooked tortillas to a plate lined with a clean kitchen towel and cover to keep warm while you cook the remaining tortillas.
    • Store leftover tortillas in an airtight container in the refrigerator for up to a week. They can also be frozen for longer storage.

Tips

  • Rolling: If the dough is too sticky to roll out, you can refrigerate it for 10-15 minutes to make it easier to handle.
  • Thickness: Roll the tortillas as thin as possible without tearing to get a more flexible wrap.
  • Cooking: Don’t overcook the tortillas, or they might become too crispy and hard to fold.

Enjoy your homemade keto-friendly tortillas!
