Zero Point Chicken Stir-Fry
Ingredients:
For the Stir-Fry:
- 1 pound boneless, skinless chicken breasts, thinly sliced
- 4 cups mixed vegetables (e.g., broccoli, bell peppers, snap peas, carrots), chopped
- 1 tablespoon soy sauce (low-sodium for a healthier option)
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil
- 1 tablespoon fresh ginger, minced
- 2 cloves garlic, minced
- Salt and pepper to taste
- Crushed red pepper flakes (optional, for heat)
- Cooking spray
For Serving (Optional):
- Cauliflower rice or brown rice
Instructions:
- In a bowl, marinate the sliced chicken with soy sauce, oyster sauce, sesame oil, fresh ginger, garlic, salt, and pepper. Let it marinate for at least 15-20 minutes.
- Heat a large skillet or wok over medium-high heat and coat it with cooking spray.
- Add the marinated chicken to the skillet and cook until browned and cooked through. Remove the cooked chicken from the skillet and set it aside.
- In the same skillet, add more cooking spray if needed. Add the chopped mixed vegetables and stir-fry until they are crisp-tender.
- Return the cooked chicken to the skillet with the vegetables. Toss everything together until well combined and heated through.
- If desired, add crushed red pepper flakes for a bit of heat.
- Serve the Zero Point Chicken Stir-Fry over cauliflower rice or brown rice if you prefer.
