Weight Watchers Chocolate Rice Crispie Balls (only 3 points)

Ingredients:
For the balls:
- ½ cup chopped pecans
- 1 cup shredded coconut
- 3 cups rice krispies
- ½ cup light corn syrup
- ½ cup unsweetened cocoa powder
- 1 teaspoon vanilla extract
For coating (optional):
- Dark chocolate chips (use sugar-free for a lower point option)
- Unsweetened shredded coconut (optional)
Instructions:
- In a large mixing bowl, combine the chopped pecans, shredded coconut, and rice krispies.
- In a small saucepan over low heat, warm the corn syrup and cocoa powder, stirring until well combined. Remove from heat and stir in the vanilla extract.
- Pour the cocoa mixture over the rice krispies mixture. Mix until everything is well coated.
- Allow the mixture to cool for a few minutes until it’s comfortable to handle.
- With slightly damp hands, form the mixture into balls and place them on a parchment paper-lined tray.
- If desired, melt dark chocolate chips in a microwave-safe bowl and dip each ball into the melted chocolate. Roll in unsweetened shredded coconut if you like.
- Place the coated balls back on the parchment paper and let them cool until the chocolate hardens.
