Weight Watchers Chocolate Rice Crispie Balls (only 3 points)

Ingredients:

For the balls:

  • ½ cup chopped pecans
  • 1 cup shredded coconut
  • 3 cups rice krispies
  • ½ cup light corn syrup
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract

For coating (optional):

  • Dark chocolate chips (use sugar-free for a lower point option)
  • Unsweetened shredded coconut (optional)

Instructions:

  1. In a large mixing bowl, combine the chopped pecans, shredded coconut, and rice krispies.
  2. In a small saucepan over low heat, warm the corn syrup and cocoa powder, stirring until well combined. Remove from heat and stir in the vanilla extract.
  3. Pour the cocoa mixture over the rice krispies mixture. Mix until everything is well coated.
  4. Allow the mixture to cool for a few minutes until it’s comfortable to handle.
  5. With slightly damp hands, form the mixture into balls and place them on a parchment paper-lined tray.
  6. If desired, melt dark chocolate chips in a microwave-safe bowl and dip each ball into the melted chocolate. Roll in unsweetened shredded coconut if you like.
  7. Place the coated balls back on the parchment paper and let them cool until the chocolate hardens.
